Why Bison?
The main reason for raising bison, other than the love of the animals and the life style, is for the meat. The Canadian Bison Association recommends bison meat as a healthy and natural alternative to beef. As well as being a natural red meat, bison meat is low in fat, low in cholesterol, and high in protein. No antibiotics, chemicals or growth hormones are used in raising XH Buffalo.
The ranch sells bison meat by the side from November until February. People interested in purchasing meat can do so by purchasing a half, or a whole animal. The meat from 18 to 21 month old yearlings is processed in a government approved facility and will be cut and wrapped to suit customer wishes.
When you purchase bison meat, nutritionally you are getting more... more protein and more nutrients, for less... less fat, less calories and less cholesterol.
It takes less buffalo meat to satisfy an appetite and cooking bison meat results in very little shrinkage, therefore less goes further.
